Banana Banoffee Pie

Ingredients base:

 

4oz (100g) Jersey Dairy Unsalted Butter

9oz (250g) crumbled digestive biscuit

4 small bananas

 

Ingredients topping:

 

300ml Jersey Dairy Double Cream (lightly whipped)

1 tin carnation caramel

1 tablespoon of instant coffee

 

Method:

 

Melt the butter on a low heat, add the digestive crumbs and set in the bottom of an 8 inch cake tin (greased and lined).

 

On to the base spread your carnation caramel then add the sliced banana on top.

 

Dissolve one tablespoon of coffee in a little water or Tia maria if preferred. Then mix the coffee mixture with Jersey Dairy Whipped Cream.

 

Finally pipe onto the top of the pie and dust with cocoa.

 

 

Jersey Dairy Butterscotch Fudge Sauce

Ingredients:

 

225g (8oz) Muscovado Sugar

250ml (9 fl oz) Jersey Dairy Double Cream

75g (3 oz) Jersey Dairy Unsalted Butter

1 tbsp Golden Syrup

A glass of rum - something spicy!

 

Method:

 

Slowly melt the butter in a thick bottomed pan, then stir in all the other ingredients.

 

When the suagr has dissolved, boil.

 

Remove from the heat. Allow to cool slightly and serve over Jersey Dairy Vanilla Ice Cream.

 

 

Jersey Dairy Chocolate Sauce

Ingredients:

 

250ml (9fl oz) Jersey Dairy Whipping Cream

85g (4oz) Dark Chocolate 70% cocoa

1/2 tsp Vanilla Extract or essence

 

Method:

 

Mix the cream and choclate in a heavy pan over a low heat until smooth. Approximately 15 mins). Stir in the vanilla and serve warm with Jersey Dairy Ice Cream, Crêpes or profiteroles.

 

 

Bacon and Tomato Cream Sauce

Ingredients:

 

Knob of Jersey Dairy Unsalted butter

A splash of olive oil

1 onion chopped

1 clove of garlic crushed and chopped

4 slices of smoked bacon chopped

3 spring onions sliced

1 tin of chopped tomatoes

250ml Jersey Dairy Double Cream

1/4 pint of white wine

 

Method:

 

Slowly fry bacon, garlic, spring onions and chopped onion in olive oil and Jersey Dairy Unslated Butter. Add the wine and then reduce, then add the tomoatoes and boil. Lower the heat and add the cream. Jersey Cream is robust but not entirely bullet proof so handle with love!

 

Serve with cooked pasta or plain grilled fish with some fresh shaved parmesan, snipped chives and fresh rocket.

 

 

 

Creamy Smoked Salmon Pasta

Ingredients:

 

Knob of Jersey Dairy Salted Butter

A splash of olive oil

175g (6oz) Linguini

1/2 red onion - chopped

150ml (1/2 pint) white wine

100g (4oz) mange tout peas

150ml (1/4 pint) Jersey Dairy Double Cream

100g (4oz) smoked salmon cut into strips

juice and grated zest of 1/2 lemon

Snipped chives and chopped dill

 

Method:

 

Cook pasta as required but recommend that you do not boil it into the next life! Gently fry the onions in a littel olive oil and butter untill they are transparent. Add the wine, lemon jiuce and zest then reduce. Add the smoked salmon, mange tout and cook for 1 minute. Gradually stir in the cream, thicken slightly over heat.

 

Drain and add the pasta to the sauce. Season to taste and top with chives and dill.

 

Top with grated Parmesan to serve.

 

 

Pepper and garlic Cream Sauce for Steak

Ingredients:

 

2 Ribeye Steaks

1 medium onion - finely chopped

1 cloves of garlic

250ml of Jersey Dairy Double Cream

A splash or three of red wine

Coarse ground pepper to taste

Table spoon of olive oil

Knob of Jersey Butter

 

Method:

 

Cook steaks (coated in coarse ground pepper) in olive oil and a knob of Jersey Dairy Salted Butter, take out and keep warm.

 

Add the finely chopped onion and cloves of garlic to the steak pan and soften over medium heat, add 250ml Jersey Dairy Double Cream and those splashes of red wine if desired. heat until thickened. Add steaks and serve.

 

 

Mushroom Cream Sauce

Ingredients

 

500g sliced mushrooms

250ml Jersey Dairy Double Cream

1/2 large red onion - chopped

125ml white wine

Knob of Jersey Dairy Unslated Butter

2 cloves of garlic - crushed & chopped

Nutmeg and seasoning

 

Method

 

Sowly fly onion and garlic in butter add white wine and mushrooms, reduce wine then lower heat and add cream and seasonings.

 

Add cooked pasta or drape over chicken, steak or pork.

 

Tip: Also great with BBQ meats.

 

 

Garlic & Herb Crème Dip

Ingredients:

 

250ml Jersey Dairy Crème Fraiche (lightly whipped)

2 Cloves Garlic (crushed & chopped)
2 Tbsp chopped Chives & Parsley
Salt and Black Pepper

 

Method:

 

Mix all ingredients.
Serve with vegetable crudités, jacket wedges, tortilla chips, fries or Italian bread sticks (Grissini).

 

 

Cocktail Sauce Dip For Prawns Etc.

Ingredients:

 

250ml Jersey Dairy Crème Fraiche (lightly whipped)
2 Tbsp Tomato Ketchup
Squeeze of Lemon or Lime Juice
Splash of Worcester Sauce
Few Drops of Tabasco (Optional)
Salt and Black Pepper

 

Method

 

Mix all ingredients.
 

 

 

Sweet Chilli & Spring Onion Dip

Ingredients:

 

250ml Jersey Dairy Crème Fraiche (lightly whipped)
2 Tbsp Sweet Chilli Sauce
3 Spring Onions (thinly sliced)
Salt and Black Pepper

 

Method:

 

Mix all ingredients.
Serve with vegetable crudités, jacket wedges, tortilla chips, fries or Italian bread sticks (Grissini).

 

 

Creamy Smoked Bacon Dip

Ingredients:

 

250 ml Jersey Dairy Crème Fraiche (lightly whipped)
1 Pack of Smoked Bacon Lardons (fried and cooled on kitchen paper)
3 Spring Onions (finely sliced)
Splash of Worcester Sauce
2 Tbsp Cream Cheese
Good Pinch of Smoked Paprika

 

Method:

 

Mix all ingredients.
Serve with vegetable crudités, jacket wedges, tortilla chips, fries or Italian bread sticks (Grissini).

 

 

Jersey Mature Cheddar & Red Onion Dip

Ingredients:

 

250ml Jersey Dairy Crème Fraiche (lightly whipped)
160g Grated Jersey Mature Cheddar
1 Small Red Onion (finely chopped)
Chopped Chives
Salt and Black Pepper

 

Method:

 

Mix all ingredients.
Serve with vegetable crudités, jacket wedges, tortilla chips, fries or Italian bread sticks (Grissini)
 

 

 

Avocado & Lemon Crème Fraiche Dip

Ingredients:

 

250ml Jersey Dairy Crème Fraiche (lightly whipped)
2 Ripe Avocados mashed with a good squeeze of lemon juice
Grated rind of lemon
Clove of Garlic (crushed and chopped)
Spring Onion or Chives finely chopped
Salt and Black Pepper

 

Method:

 

Mix all ingredients and squeeze a little lemon juice on top and put cling film on surface to stop discolouring.
Serve with vegetable crudités, jacket wedges, tortilla chips, fries or Italian bread sticks (Grissini).

 

 

Curry Crème Fraiche Dip

Ingredients:

 

250ml Jersey Dairy Crème Fraiche (lightly whipped)
150ml Jersey Dairy Natural Yoghurt
Clove Garlic (crushed and chopped)
Splash of Tabasco / Worcester Sauce
2 Tspn Curry Powder
Splash of Soy Sauce (optional)

 

Method:

 

Mix all the ingredients.
Serve with vegetable crudités, jacket wedges, tortilla chips, fries or Italian bread sticks (Grissini).
 

 

 

 

Creamy Delight Smoothie

Ingredients:

 

1 banana or 2 for a really thick smoothie

15 strawberries

500ml of milk

3 tablespoons of Luxury Natural Yogurt

5 scoops of vanilla ice cream

240ml / 8.5 fluid oz. of double cream

2 table spoon apple juice

2 teaspoon vanilla

 

 

Super Power Smoothie

Ingredients:

 

1 banana sliced

1/2 cup orange juice

1/4 cup blueberries

1/3 cup Luxury Natural Yogurt

2-4 ice cubes

1/4 cup of Oats cereal

 

 

The Strawbery Skinny

Ingredients:

 

Low fat Yogurt – as much as you like

1/4 Cup Semi-skimmed milk

2 Tablespoons of honey

3 Cups Strawberries

1 Cup Ice Cubes

 

 

Mexican Pepper Dip

Ingredients

250ml Jersey Dairy Crème Fraiche (lightly whipped)
1 Clove Garlic (crushed and chopped)
½ Red Pepper and ½ Green Pepper (de-seeded and finely diced)
Splash of Tabasco
Good pinch of Smoked Paprika
Squeeze of Lemon Juice
Salt and Black Pepper
